Oh, but you will. Khaleesi. You will.
Pentos, one of the free cities in Essos known for its bustling trade, offers a variety of culinary delights. In this recipe, inspired by the flavors of Pentos, we incorporate a dish reminiscent of orzo, a popular ingredient in the city. This single pan mushroom dish is truly fit for a Khaleesi.
Here’s What You Need:
- Portabella Mushrooms: These large and meaty mushrooms serve as the main ingredient in the dish, providing a rich and earthy flavor. The mushroom caps are sliced thin and added as a garnish, while the stems are chopped and cooked to enhance the overall taste and texture of the dish.
- Butter: The butter is melted in the pan and used to sauté the onions, garlic, and mushroom stems. It adds a rich and creamy base to the recipe and helps to bring out the flavors of the other ingredients.
- Pearl Onions (or Chopped Sweet Onions): The onions add a mild and slightly sweet flavor to the dish. They are sautéed along with the garlic and mushroom stems, providing a savory base for the orzo to absorb.
- Orzo: Orzo is a small, rice-shaped pasta that resembles grains of barley. It acts as the main carbohydrate component of the dish. When cooked in the butter and broth, it absorbs the flavors and becomes tender and creamy.
- Chicken or Vegetable Broth: The broth provides the necessary liquid for cooking the orzo. It infuses the pasta with flavor and creates a creamy texture as it is absorbed. You can choose either chicken or vegetable broth depending on your preference or dietary needs.
- Whiskey Cheese (or Shredded Parmesan): The whiskey cheese or shredded Parmesan is added towards the end of the cooking process to impart a rich and tangy flavor to the dish. It adds depth and creaminess to the orzo, enhancing its overall taste. If you can’t find whiskey cheese, shredded Parmesan works as a great alternative.
- Salt and Pepper: These seasonings are used to enhance the flavors of the dish. Salt adds savory notes and balances the other flavors, while pepper adds a subtle kick and depth to the overall taste.

Start buy cleaning your mushrooms and removing the stems.Or if you’re like me and totally did not read the recipe well enough while getting ingredients and got stemless portabellas, use 1/3 cup sliced mushrooms to make up for it. Set the caps aside and chop up the stems.
After about 3 minutes, or when your onions have softened, add your orzo. Then pour in 1 cup of water. Stir constantly until nearly evaporated.
Then cup-by-cup add the stock, allowing the orzo to absorb as much as it can before it is all almost evaporated. This process will take about 25 minutes, so you best get the Red Wedding episode lined up to watch while you stir. When the orzo has soaked in as much as it can, add the whiskey cheddar cheese.

Ingredients
- 3 portabella mushrooms with stems
- 6 tablespoons butter
- 6 pearl onions can sub chopped sweet onion
- 2 teaspoons garlic
- 1 cup orzo
- 4 cups chicken or vegetable broth
- ⅓ cup whiskey cheese or shredded Parmesan
- salt & pepper, to taste
Instructions
- Clean your mushrooms and remove the stems. Set the caps aside while you chop the stems.
- In a large pan over medium-high heat, melt the butter. Then add the onion, garlic, and mushroom stems, and sauté until softened.
- Add the orzo to the pan and stir to coat it with butter. Then add one cup of stock at a time, stirring constantly, until the orzo has taken in as much moisture as it can. This process typically takes about 25 minutes.
- Slice your portabella caps paper thin, reserving half for garnishing. Sprinkle the sliced caps over the orzo and stir well to combine, about 5-8 minutes until the mushrooms have softened. Serve garnished with the remaining mushroom slices and enjoy!
