'Perhaps a dish of peas and onions, some fresh baked bread with butter, and a flagon of mulled wine to wash it down. Or beer, if that's easier. I try not to be overly particular.' A Lannister always pays his debts.

"You lost a hand, not a stomach."

Start by removing the leg bone, or have your butcher do it for you, like I did! They will also (begrudgingly) butterfly it for you, if you ask with a smile. Roughly chop up your spinach.

Then toss it into a pan over medium heat with your oil.

Add your garlic and saute until halved in volume, or about 2 minutes.

Mix your sauted spinach and garlic into a small bowl with the rest of the pine nuts, golden raisins, and goat cheese.

Then smear it generously on the inside of the lamb leg.

No Cooking Twine? No Problem! Here's a problem that I've run into more than once before: having the need for cooking twine and never having any. If you're like me, you do most of your cooking on the fly and needing to MacGyver up some obscure tool becomes more of an art than a skill. So use foil! If you can't find anything else, roll up some foil and wrap it around your meat just like you would do with cooking twine. Definitely a great quick fix for a temporary issue.

Put your lamb into a roasting pan and into the oven at 350 F for an hour to an hour and a half. The internal temperature should be 145 F.

Admittedly, this took much longer than I expected, and my leg actually took about 2 hours from start to finish - but my leg also weighed in at about 7 lbs.

Once you hit the 145 F mark, remove your lamb's leg from the oven and let rest for at least 10 minutes. Then slice and serve!
