What’s Up, Hungry Benders

Zuko would have had a much easier time restoring his honor if he had only tried serving the Fire Lord this meal for dinner.

I’d like to think a simple gesture such as a homemade meal would have melted the Fire Lord’s heart, made him rethink using Sozin’s comet to bring death and destruction, and accept his son back into his home with love.

While I’m not sure if there was such a thing as ‘turkey-duck’ in the Avatar universe, I know for sure ‘turkey-ducks,’ like turtle ducks, platypus-bears or flying bison, don’t actually exist in real life—so these poultry legs belong to just regular old turkeys.

Here’s What You’ll Need

I took some creative liberty when it came to choosing the ingredients for this recipe as well, since Avatar is heavily influenced by Asian and Thai cultures. I wanted to make something super spicy and roast it, since I feel like fire benders, out of all the different benders, would be most prone to eating spicy chow.

ingredients for turkey legs
  • Large skin-on turkey legs: Main protein source, juicy and flavorful when roasted.
  • Butter: Adds richness and enhances the flavor of the turkey legs.
  • Olive oil: Helps with browning and adds a subtle fruity note to the dish.
  • Hoisin sauce: Provides a savory, sweet, and tangy element to the marinade.
  • Thai seasoning paste (lemongrass, ginger, chili peppers): Infuses the turkey legs with aromatic and spicy flavors.
  • Red curry paste: Adds a vibrant color and a kick of heat to the marinade.
  • Fish sauce: Enhances the umami and savory profile of the dish.
  • Minced garlic: Adds depth of flavor and a hint of sharpness to the marinade.
  • Brown sugar: Balances the flavors with a touch of sweetness.
  • Golden raisins: Brings a touch of sweetness and texture to the dish.
  • Ghee or butter, melted: Adds richness and helps to baste and brown the turkey legs during cooking.

Let’s Get Started

turkey leg marinade

The best part about this recipe is that it requires very little standing time, as you really only need to whisk together the marinade ingredients and let the turkey legs rest for a few hours in the sauce prior to cooking.

marinating turkey leg

I arranged my turkey legs in a roasting pan with some frozen veggies and then popped it into the firebend-ed oven set to 375°F for 20 minutes, covered.

After those 20 minutes are up, brush the legs with butter or ghee and baste them with the remaining sauce. Continue cooking, uncovered, for an additional 20-30 minutes, or until the turkey legs are cooked through.

I served mine alongside some momos—not the flying lemur, Momo—but authentic Nepali momos, which I’m sure members of the Fire Nation would have enjoyed.

Helpful Tips to Making Homemade Turkey Legs

  • Marinating time: For maximum flavor, marinate the turkey legs for at least 1 hour or overnight in the fridge.
  • Basting: Regularly baste the turkey legs with the reserved marinade while cooking to keep them moist and flavorful.
  • Crispy skin: To achieve crispy skin, make sure to brush the melted ghee or butter over the turkey legs during the last stage of cooking.
  • Internal temperature: Ensure the turkey legs are fully cooked by using a meat thermometer. The internal temperature should reach 165°F (74°C).
  • Vegetable choices: Use a variety of vegetables in the roasting pan, such as carrots, potatoes, or bell peppers, to add flavor and create a complete meal.
  • Adjusting spice level: Increase or decrease the amount of red curry paste and Thai seasoning paste to suit your desired level of spiciness.
  • Serving suggestions: Pair the Fire Nation Turkey Legs with fragrant jasmine rice, a fresh salad, or steamed vegetables for a balanced and satisfying meal.
  • Make-ahead option: Prepare the marinade in advance and store it in an airtight container in the refrigerator. When ready to cook, simply marinate the turkey legs and proceed with the recipe.
  • Alternative cooking methods: If you don’t have an oven, you can also cook the turkey legs on a grill or stovetop using a cast-iron skillet.
  • Leftover ideas: Utilize any leftover cooked turkey meat in sandwiches, wraps, or salads for delicious next-day meals.
