What’s up, Hungry People!

Today I have a recipe that will take your regular mac ‘n’ cheese to a whole new level of creaminess and deliciousness. Introducing… Creamy Baked Macaroni!

The Creaminess Upgrade

Mac ‘n’ cheese is a classic childhood favorite, but let’s face it, sometimes we get tired of the same old thing. And if you’re on a budget, mac ‘n’ cheese can become a monotonous weekly routine. But fear not! Tonight, we’re going to transform this humble dish into something extraordinary.

Enter the Cream Cheese and Cottage Cheese Combo

The secret to the next-level creaminess in this recipe lies in two surprising ingredients: cream cheese and cottage cheese! These additions will elevate the flavor and texture of your macaroni, giving it a velvety smoothness that will make your taste buds dance with joy.

Here’s What You’ll Need

  • Mac & cheese: The base of the dish, providing the pasta and cheese flavor.
  • Cream cheese: Adds richness and creaminess to the macaroni.
  • Cottage cheese: Enhances the creaminess and adds a subtle tangy flavor.
  • Bread crumbs: Create a crunchy and flavorful topping for the baked macaroni.
  • Panko: Adds extra texture and crispiness to the breadcrumb topping.
  • Butter: Melts into the breadcrumb mixture to bind and add richness.
  • Spicy dry mustard: Provides a tangy and slightly spicy kick to the dish.
  • Paprika: Adds smoky flavor and a touch of color to the macaroni.
  • Cayenne: Adds a hint of heat and depth of flavor.
  • Dried parsley: Adds a pop of herbaceous flavor and a touch of green.
  • Salt and pepper: Enhance the overall taste and season the dish.

Let’s Cook!

Al Dente Is the Way to Go

Cooking the macaroni al dente is essential for this recipe. Since it will continue to cook in the oven, you want to avoid ending up with mushy noodles. So follow the package instructions carefully and take them out a minute or two earlier than the suggested cooking time.

Get Creative with Mix-Ins

While this recipe is already fabulous on its own, you can always add some mix-ins to take it to the next level. Try tossing in some cooked bacon, sautéed mushrooms, or even diced tomatoes for extra flavor and texture. Get creative and make it your own!

Leftovers? No Problem!

If you happen to have leftovers (which is a rare occurrence in my house!), you can store them in an airtight container in the refrigerator for up to three days. When reheating, add a splash of milk to restore the creamy consistency.

Tips for Homemade Macaroni & Cheese

  • Cream Cheese Consistency: Make sure the cream cheese is at room temperature for easy blending and smooth texture.
  • Mixing Cheese Sauces: When combining the cottage cheese and cream cheese, microwaving it for a short time helps soften and blend the cheeses together smoothly.
  • Cooking Pasta Al Dente: Be careful not to overcook the macaroni as it will continue to cook in the oven. Cook it until it is al dente, firm but not too soft.
  • Choosing Breadcrumbs: For added flavor, use seasoned breadcrumbs or mix in some grated Parmesan cheese with the breadcrumbs for a cheesy twist.
  • Topping Texture: If you prefer a crispier topping, drizzle a little extra melted butter over the breadcrumbs before baking.
  • Baking Time Variations: Baking time may vary depending on your oven, so keep an eye on the macaroni during the last few minutes to achieve the desired golden brown color.
  • Adding Mix-Ins: Get creative with your mac ‘n’ cheese by adding cooked bacon, sautéed mushrooms, diced tomatoes, or other favorite ingredients for extra flavor and variety.
  • Leftover Revamp: If you have leftover creamy baked macaroni, you can repurpose it by adding some cooked ground meat or vegetables and turning it into a delicious casserole.
  • Reheating Creaminess: When reheating leftovers, add a splash of milk to restore the creamy consistency and prevent it from drying out.
  • Adjusting Spice Level: If you prefer a milder macaroni, you can reduce the amount of cayenne pepper or omit it altogether.

There you have it, Hungry People! Creamy Baked Macaroni, the ultimate comfort food that will leave you wanting more. It’s affordable, easy to make, and a surefire hit with both kids and adults. Give it a try and let me know what you think!
