Mac 'n' cheese is a childhood favorite, but sometimes, frankly, I'm just sick of eating it. When you're on a budget, mac 'n' cheese can be a weekly ordeal. Tonight though, we're going to turn it up a notch by adding cream cheese and, shockingly, cottage cheese!

Creamy Baked Macaroni


  • 1 box favorite mac & cheese
  • 8 ozs cream cheese, room temperature
  • ¼ cup cottage cheese
  • ¼ cup bread crumbs
  • ¼ cup panko
  • 4 tbsps butter, melted
  • 1 tsp spicy dry mustard
  • 1 tsp cayenne pepper
  • 2 tsps paprika
  • 2 tsps dried parsley
  • salt & pepper, to taste

  1. Preheat the oven to 375 F. Cook the macaroni according to the instructions on the box.
  2. In a small bowl, stir together the cottage cheese and cream cheese. Add the mustard, cayenne pepper, and paprika Microwave it for 45 seconds to soften it further and stir until smooth.
  3. Strain the macaroni and stir in the cheese that comes in the box. Combine the cream cheese blend with the macaroni and stir until it is completely incorporated.
  4. Spray a 9x9 baking dish with cooking spray. In another small bowl, stir together the bread crumbs, panko, parsley and melted butter until a crumbly topping forms.
  5. Pour the macaroni into the pan and cover it with the breadcrumb mix. Pop the pan into the oven at bake until the top is nice and brown, or about 20 minutes. Serve and enjoy!
