Have some leftovers from Thanksgiving festivities that you are getting sick and tired of eating every night for dinner? That's kind of how I felt after I made some Thanksgiving pot pie and then was home alone all week, which meant it was Thanksgiving pie for breakfast, lunch, and dinner.

Fortunately, I still had half of the ingredients leftover from my Thanksgiving pie, which meant I had the fun opportunity to make them into something entirely new from them - and not remotely related to Thanksgiving. I quickly cooked the ground turkey and sauteed the vegetables until tender.

Then I added my favorite pasta marinara sauce and some fettuccine noodles. When everything was stirred together, it became a some what healthier alternative to your traditional beef and spaghetti noodles night, which we all have, I'm sure.

Turkey Fettuccine | 20 Minute Meals

Cook Time: 10 minutes

Makes 4-5 servings


The Starving Chef Blog
  • 1/2 lb ground turkey
  • 1/2 cup white onion, chopped
  • 1/2 cup leek, chopped
  • 1/2 cup frozen peas, carrots, corn, green beans, etc
  • 2 tablespoons butter
  • fettuccine noodles
  • 1 cup favorite pasta marinara
  • salt & pepper, to taste

Here's How:

  1. In a large pan over medium high heat, brown and crumble the ground turkey until no longer pink. Remove from pan and wipe pan clean.
  2. Bring a pot of water to a rolling boil. Add the fettuccine noodles and cook according to the instructions on the side of the box. Drain and set aside.
  3. Add two tablespoons of butter to the pan over medium heat. Saute the chopped onion and leek until tender, then add the frozen vegetables and cook until heated through.
  4. Return the ground turkey to the pan and stir well to combine. Pour the marinara sauce over the turkey and cover. Reduce heat and stir occasionally, until sauce is heated through.
  5. Toss the noodles into the pan with the meat sauce and stir until the noodles are completely covered. Served right away with garlic bread and enjoy!
