We're finally moved into our new home in Medina and have started to explore our town. Every Saturday on the Historic Square there's a farmer's market. Being somewhat in the country itself, you know what the Medina farmers are bringing is super fresh.

This week I picked up some brioche, garlic scapes, and some incredible grassfed and raw milk cheeses.

Nick and I decided to get a few different kinds of cheese, and since we prefer spicy foods, spicy cheeses were of course a must. We choose some raw milk pepperjack, and grassfed habanero cheese, as well as some grassfed mozzarella cheese too. I've never had raw milk cheese before, but it's rich flavor is something I now crave whenever I eat cheese - plus it's healthier for you too! So bring on the cheese please.

Brioche is celebrated as the perfect bread for French toast, and it's easy to see why. It readily absorbs liquids while still retaining its shape and thickness. With that thought in mind, I figured Brioche was also the perfect bread for grilled cheese, where I really wanted the bread to still be thick and crunchy on the outside, and filled with cheesy goodness on the inside.

I topped my grilled cheese with all three types of cheese, plus a tablespoon of pizza sauce (because i didn't have any tomato soup to dip my grilled cheese in) and some fresh basil along with the scapes. Then just toss the butter in the skillet and fry until golden brown and the cheeses have melted together into an ooey gooey mess - the perfect grilled cheese!

Brioche Grilled Cheese


  • 2 slices brioche
  • 2 tbsp butter
  • 1 slice raw milk pepperjack cheese
  • 1 slice grassfed mozzarella cheese
  • 1 slice grassfed habanero cheddar
  • 1 tbsp pizza sauce
  • 2 tbsp fresh scapes, chopped
  • 4 fresh basil leaves

  1. Preheat a skillet over medium heat and add the butter.
  2. While the butter is melting assemble the sandwich so the pizza sauce, basil, and scapes are between slices of cheese in the center.
  3. When the butter is foaming, add the sandwich. Grill until golden brown and the cheese has melted, about 3-4 minutes per side. Serve hot and enjoy!
