One Pot Cheeseburger Soup

Ingredients
  

  • 16 oz ground beef
  • 1 russet potato
  • ½ cup onion chopped
  • ¼ cup flour
  • 2 cups beef broth
  • ½ cup heavy cream
  • ¼ cup fresh parsley
  • 10 slices cheddar cheese + more for topping
  • 1 tablespoon Worcestershire
  • 7 pickle slices + more for topping
  • 4 cherry tomatoes sliced for topping
  • 1 hamburger bun toasted and sliced for topping
  • spicy ketchup for topping
  • salt & pepper to taste

Instructions
 

  • Preheat the oven to 350°F. Cut the hamburger bun into cubes. Lightly spritz with olive oil and place them on a baking sheet. Bake until they're crunchy and browned, about 8-10 minutes.
  • In a large pot over high heat, cook and crumble the ground beef until browned. Once cooked, transfer the beef to a colander to rinse. Clean the pot, ensuring to leave a bit of the grease behind.
  • Using the remaining grease in the pot, heat it over medium-high heat. Wash, peel, and chop the russet potato into slices about one inch long and a half-inch thick (resembling the size of a typical french fry). Fry the slices until they turn golden brown on all sides.
  • Stir in the chopped onions and desired amount of chopped pickles. Return the cooked ground beef to the pot and mix everything together. Season the mixture with salt and pepper, then drizzle in the Worcestershire sauce.
  • Sprinkle the flour over the mixture and stir until all ingredients are well coated. Gradually pour in the beef broth followed by the fresh parsley.
  • Bring the soup to a boil. As it heats, add the cubed cheese slices. As the cheese begins to melt, gently pour in the heavy cream. Continue stirring until the cheese fully melts, then remove the pot from the heat.
  • Serve your soup immediately! Garnish with additional pickle slices, a swirl of spicy ketchup, extra cheese slices, parsley, and those crispy hamburger croutons. Enjoy!
