  • 2 cups plain bread crumbs
  • 1 lemon zested & juiced
  • 1 pie crust or homemade pie crust equivalent
  • 1 tablespoon water + 1 egg whisked
  • clotted cream for topping, can sub whipped cream

Instructions
 

  • In a large bowl, microwave 1-3 cups of water for 1-2 minute intervals until it is steaming hot but not boiling. Place a smaller bowl in the center of the larger bowl so that the water comes about halfway up the sides. Pour the golden syrup and the black treacle into the smaller bowl. Let soften for about ten minutes.
  • Preheat the oven to 375°F. Stir the breadcrumbs into the softened syrups, leave in the warm water bath while stirring. Stir in the lemon juice and zest. Let rest for another five minutes.
  • Prepare the pie crust by either making your favorite shortcrust recipe or using store-bought rolled dough. If using pre-made dough, cut a sheet of parchment paper to be about 1/4 inch wider in diameter than the rolled-out crust.
